Cherries, lots of them – white ones, red ones and dark ones with some sweet herbs

Tastes like...

Red and sour cherry. Ferrous and bloody, anise and vanilla

Feels...

Delicious. Layered and mouth filling.

Tannins...

Substantial, fine and softened. They are enhanced and amplified by natural high acidity.

Risotto with loads of garlic, basil and tomato and heaps of Parmigiano Reggiano.

ORIGIN: Northern Adelaide Hills

ALTITUDE: Approx 300 metres above sea level

HARVEST: After a cool summer and autumn the grapes were picked on 5th May, 2017.

FERMENTATION: A cool and slow fermentation in open fermenters with regular plunging over an extended skin contact of 31 days to modify grape tannins and enhance mouthfeel.

MATURATION:  Transferred to a combination of 8% new French Oak and seasoned French and American oak Hogsheads and Puncheons for nine months maturation prior to being bottled.

ANALYSIS: Alcohol 13.63% v/v, Sugar (G/F) <0.9 g/L (dry), pH 3.52, Titratable Acidity 5.54 g/L
