Additional Details

ORIGIN: Grown by Vicki Vasarelli in Currency Creek, Southern Fleurieu Peninsula.

FERMENTAION: Eight hours on skins, then the juice was removed from the skins and allowed to ferment naturally in older French barriques and in tank. Minimal additions were made during and after fermentation.

MATURATION: The wine remained on yeast lees for 11 months with occasional batonnage prior to a single filtration immediately prior to bottling.

 

ANALYSIS: Alcohol 11.8%v/v, Sugar <0.5g/L (dry), pH 3.28, Titratable Acidity 6.2 g/L
