Additional Details

ORIGIN: McLaren Vale (Seaview sub region)

FERMENTATION: After a few days pre-ferment soak the fruit was inoculated with a Rhone strain yeast. Fermentation included 10% whole bunch and was completed over eight days.

MATURATION: Transferred to a combination of seasoned older French and American Hogsheads and Puncheons for 11 months maturation prior to bottling.

ANALYSIS: Alcohol 14.78% v/v, Sugar (G/F) <0.9g/L (dry), pH 3.57, Titratable Acidity 5.82 g/L
